Tiramisu Cheesecake: tiramisu recipes


Ingredients:

2 1/4 cups crushed chocolate graham crackers
1/4 cup butter, melted
2 (8 ounce) packages cream cheese, softened
1 (14 ounce) can sweetened condensed milk
1/2 cup sour cream
1/4 cup lemon juice
1 (12 ounce) box vanilla wafer cookies (such as Nilla®)
1/2 cup cold, brewed coffee



Here's how to bake;

1. Preheat oven to 350 F. In small bowl, combine cookie crumbs and melted butter. Line a 9x13-inch pan with aluminum foil, making sure to cover the sides and leaving several inches of aluminum foil on each end.

2. In a small measuring jar, dissolve coffee crystals in the rum or rum flavoring. In a medium mixing bowl, beat cream cheese, mascarpone cheese and sour cream together until smooth. Slowly add sugar, cornstarch and vanilla. Add eggs all at once, beating until just combined. Stir in coffee/rum mixture and pour into pan.

3. Place pan in shallow baking dish. Bake for 45 to 50 minutes or until center of cheesecake is set. Remove from oven and let cool at least 15 minutes. Set aside to cool.

4. Run knife around edges of pan, loosening lady fingers from sides. Cool for additional 30 minutes before removing pan. Cover and chill at least four hours.


Procedure for Icing:

Beat mascarpone cheese or substitute, Thick vanilla custard milk and cool whip or heavy whipped cream together. Beat it gently for two minutes.
