Pork Chops with Spicy Roasted Pepper Sauce


PORK CHOPS WITH SPICY ROASTED PEPPER SAUCE

Seared Pork Chops with Spicy Roasted Pepper Sauce

INGREDIENTS:

  • 2 teaspoons 25%-less-sodium Montreal steak seasoning
  • 4 (4-ounce) boneless center-cut loin pork chops
  • Olive oil-flavored cooking spray
  • 1 cup bottled roasted red bell peppers, drained
  • 2 tablespoon water
  • 1/2 teaspoon ground cumin
  • 1 chipotle chile, canned in adobo sauce
  • 2 teaspoons extra-virgin olive oil

PROCEDURE:

1. Sprinkle seasoning over pork. Heat a large non stick skillet over medium-high heat. Coat pork with cooking spray. Add pork to pan; cook 4 minutes. Turn pork over; mixture to a pan;cover and keep warm.
2. Place bell peppers and the next 3 ingredients (through chile) in a blender; process until smooth.
3. Add bell pepper mixture to pan. Return pan to medium heat; cook 2 minutes, stirring frequently. Spoon sauce into serving plates. Top each with a chop; drizzle with oil.
