TURKEY ARROZ CALDO

INGREDIENTS:
- 2 tablespoon oil
- 1 tablespoon ginger, julienne
- 1 medium onion, sliced
- 1 tablespoon minced garlic
- 2 cups turkey carcass
- 2 cups rice grains, washed
- 6 cups water
- 6 cups chicken broth
- salt and pepper, to taste
- fried garlic chips and chopped spring onions, for garnish
PROCEDURE:
1. In a pot, heat oil then saute ginger, onion and garlic until fragrant. Add turkey bones and cook until golden in color.
2. Add the rice grains. Stir until well mixed.
3. Pour in water and chicken broth. Cover, let boil for about 20 minutes or until rice is cooked through. Stir occasionally. Season with salt and pepper.
4. Before serving, fish out the bones. Remove the meat still clinging to the bones and put back into the broth. Discard the bones and put back into the broth. Discard the bones. Serve hot in individual bowls and garnish with fried garlic chips and chopped spring onions.
