How to Cook Green Coconut Sauce for Steamed Seafood

GREEN COCONUT SAUCE FOR STEAMED SEAFOOD


INGREDIENTS:


  • 3 cloves garlic, minced
  • 1 piece onion, minced
  • 2 tablespoons finely minced ginger
  • 1 tablespoon oil
  • 2 1/2 cups pure coconut milk
  • 1 small bundle kangkong (swamp cabbage), trimmed and finely minced
  • green food coloring
  • salt to taste
  • ground white pepper, to taste
  • white sugar, if desired
  • green finger chili, chopped (optional)

PROCEDURE:

Saute garlic, onion and ginger in small amount of cooking oil. Pour in coconut milk. Bring to a boil. Lower fire and simmer until the sauce is cooked. Drop kangkong leaves and drops of green food coloring to a desired tone. Season with salt, pepper and sugar. Add some green chili if desired.
