How to Cook Special Lengua con Vino

LENGUA CON VINO


INGREDIENTS:

  • 1 piece beef tongue
  • 6 piece small red onions, sliced thinly lengthwise
  • 1/4 cup soy sauce
  • 3 tablespoons dayap [lime] juice
  • 2 tablespoons oil
  • 4 pieces garlic
  • 1/4 cup white wine
  • 1 laurel [bay leaf]
  • water, enough to cover the tongue
  • 1 chorizo de bilbao, sliced
  • 1/2 cup olives

PROCEDURE:

1. Clean tongue thoroughly. Make small slits and insert some of the sliced onions.
2. Mix the soy sauce and dayap juice in a nonreactive bowl. Marinade tongue for 30 minutes.
3. In a preheated pot, pour in the oil and fry garlic and remaining onions. Fry the tongue. Pour in the wine, laurel leaf and water. Cook over slow fire until the tongue is tender. Add the chorizo and olives.
4. Remove the tongue to a chopping board. Slice into 1/4-inch thick pieces and arrange on a platter. Garnish with the chorizo slices and the olives.
