How to Prepare Eggplant Salad



EGGPLANT SALAD



INGREDIENTS:
  • 6 young eggplant
  • 1 large size onion
  • 5 pieces kalamansi
  • 1/4 cup coconut extract
  • salt to taste

STEPS:


  • Roast eggplants in oven or over charcoal heat.
  • Peel onion and slice finely.
  • Add kalamansi (extracted)
  • Peel and mash well the eggplants.
  • Mix and blend well the eggplant and onion.
  • Season to taste with salt.
  • Add coconut cream.


In preparing any vegetables salad is easy that everybody can do it. Especially if we do not have much time to cook and were out of budget. In Province vegetables is just around the garden, if you don't have in your garden you can ask from your neighbor. Eating vegetables salad is healthy and cheaper.
