BRAZO DE MERCEDES



BRAZO DE MERCEDES

MERINGUE:

1 cup egg whites
1 cup granulated sugar
1 tsp. cream of tartar
1 tsp. vanilla

CUSTARD FILLING:

1 can condensed milk
8 pcs. egg yolks
1 tsp. vanilla

PROCEDURE FOR THE MERINGUE:

1. Beat the egg whites at high speed until soft peaks form, gradually add the sugar and continue to beat until stiff but not dry.

2. Pour meringue into 11x16x1 baking pan "greased-lined-greased", and bake for 15 to 20 minutes, or until done.

CUSTARD FILLING:

1. Combine all ingredients in a saucepan and cook over low heat until mixture thickens. Remove from heat.


ASSEMBLY:

1. Put a brown paper on a table and dust it with confectioner's sugar or flour. Invert the meringue in the brown paper, remove the paper linings and spread the custard filling. Roll immediately and transfer to a jelly roll tray.
