INGREDIENTS:

. 1 kilo punta de pecho (beef ribs)
. 5 pieces sliced bacon
. 2 pieces chorizo or 1 piece ham bone
. enough water to cover the meat
. 1 to 2 teaspoon crushed garlic
. 1/2 cup sliced onions
. salt, to taste
. 3 pieces small camote (sweet potato) peeled and quartered
. 3 pieces ripe saba banana, washed with stem ends and blossom ends
cut off and leaving peel intact
. 3 pieces young corn
. 3 pieces whole coles (curly lettuce) separate leaves from the stem
and cut the leaves in half



STEPS:

1. Cut beef into desired pieces. Place in a heavy stock pot together with the bacon and chorizo or ham bone. Add enough water to cover the meat and bone. Add the peppercorns, garlic and onions. Boil briskly for 10 minutes. Lower flame and simmer until meat is tender. Add salt to taste.

2. Remove the meat from soup stock. Set meat aside.

3. Boil soup stock and add camote, saba banana and corn, and cook until done.

4. Add coles leaves last and cook until leaves are tender.

5. Arrange meat and vegetables in a deep bowl. Add the soup.

6. Serve hot.
