LIEMPO NEGRO SPECIAL

INGREDIENTS:
. 1 kilo liempo ( pork shoulder But )
. 1/2 cup soy sauce
. 2 cups water
. oil, enough for frying
. 1/2 kilo brown sugar
. 1/2 box prunes, remove pits and mash
. 1 tablespoon cornstarch, dissolve in a little water
. 1/2 kilo cooked castanas (chesnuts), remove the shell,
chop half and keep half whole
. pinch of salt
Here's How
1. Marinate liempo in soy sauce for about 30 minutes. Remove liempo into a spot.
set soy sauce aside.
2. Add water to the pot and boil liempo for 15 minutes, Remove liempo and dry for 30 minutes
Reserve the broth.
3. In a pan with enough oil for deef-frying. Fry liempo until golden in color. Set aside.
4. To the broth in the pot, mix in reserve soy sauce and sugar, and bring to a boil. Add the
mashed prunes. Add dissolved cornstarch. Mix well. Add the chopped castanas to the
mixture and bring to a boil over to a low fire. Season with salt. Mix thoroughly. Add whole
castanas.
5. Slice the liempo across into 1/2-inch pieces. Transfer to a platter. Serve with the prume
sauce on the side.
