ALMOND-COCONUT RICE
INGREDIENTS:
- 1 (10-OUNCE) Package frozen whole-grain brown rice
- 1/3 cup slivered almonds
- 3 tablespoons flaked sweetened coconut
- 1/2 teaspoon ground cumin
- 1/8 teaspoon salt
PROCEDURE:
1. Microwave brown rice according to the package directions.
2. Heat a medium nonstick skillet over medium-high heat. Add almonds and coconut to pan; cook 2 minutes or until lightly browned,stirring constantly. Remove from heat; add rice, cumin, and salt, stirring to blend.
