Candied Yams

INGREDIENTS:
- 1 kilo yams or camote (sweet yellow potatoes)
- 1 cup white sugar
- 1/2 cup water
- 1/4 cup butter
- juice and rind of 1 orange
- 1/2 cup water
- 1 pandan leaf
- 1/4 cup mango or pineapple jam or orange marmalade
- juice of 2 calamansi (Philippine lime)
PROCEDURE:
1. Wash yams or sweet potatoes well, removing all traces of dirt and grime. Peel and slice into a large chunks. Set aside.
2. In a large saucepan, combine sugar and water. Place over medium heat and allow to boil . Lower heat and allow to caramelize to a nice golden brown.
3. Working quickly, pour in butter, juice and rind of 1 orange, water,pandan and jam. Mix well.
4. Add the sweet potato chunks and continue cooking on low heat, stirring frequently, until the chunks are fork tender. If desired, add the calamansi juice afteer cooking for a stronger citrus flavor.
5. Remove the pandan leaf and orange rind before serving.
Yams or sweet yellow potato is the main ingredient when you are going to prepare camote jam. You ca also try it it is easy and it takes a few minutes . Just for a recipe if you want to try.
