REGAL CROWN ROAST OF PORK
ROAST
- 3 kilos crown of pork
- salt and pepper
1. Slightly season meat with salt and pepper. Let stand for 2 hours.
2. Preheat oven to 375 F.
3. Roast the crown for about 2 1/2 hours, reducing temperature when nearly done. Baste with the dripping while baking.
TRIMMINGS
- 1 cup lentils (boiled and drained)
- 1 apple, diced
- 1 turnip, diced
- 1 carrot, diced
- butter
- salt and pepper
- 1 bouquet garni and let cook for 15 to 20 minutes.
ASSEMBLY
1. When roast is ready, transfer to a platter.
2. Put part of the trimming in the hollow part of the crown and arrange the rest on the outside, around it.
3. Serve hot.
