How to Prepare Chicken Galantina


CHICKEN GALANTINA


Ingredient
  • 3 kilos ground pork
  • 2 dozens eggs
  • 5 pieces chorizo
  • 1 3/4 cups sweet pickle relish
  • 1/2 kilo carrots, diced
  • juice of 1/2 kilo calamansi (Philippine lime)
  • 1/2 kilo onions, chopped
  • 1/2 kilo green peas
  • 1/2 kilo raisins
  • 3 tablespoons salt
  • 1 1/2 tablespoons ground pepper
  • 6 whole chickens, deboned

PROCEDURE:

1. In a bowl, combine the ground pork, eggs, chorizo, sweet pickle relish, carrots, calamansi juice, onions, green peas, raisins, salt and peppeer. Mix well.

2. Stuff the mixture inside the deboned chickens then sew the skin to close the cavity.

3. Wrap the chicken with aluminum foil then cook inside a steamer or oven for 3 1/2 hours.

4. The galantina should be cooled before slicing. It's best to keep it in the refrigerator until ready to serve. Slice crosswise and arrange in a platter.
